Simple Chicken Salad Recipe with Grapes and Walnuts

I have simple simple chicken salad recipe with grapes and walnuts that undoubtedly should be on repeat in your kitchen all spring and summer!

Summer is here at last! So, that means it’s time for fresh cut flowers, picnics, afternoon strolls at the park thus…lighter and cooler foods! This chicken salad recipe is very similar to how my mom makes it, and I love that it has the rich, creaminess from the mayo along with the crunch of the celery and walnuts. And did I mention it’s surprisingly easy to make?

Here’s what you’ll need:

Hand mixer or standing mixer

1 large Mixing Bowl

Measuring spoons

Measuring Cups

(Optional: Fullstar Vegetable Chopper Dicer Mandoline Slicer Food Chopper Vegetable Spiralizer Vegetable Slicer and Instant Pot)

Ingredients Needed to Make Chicken Salad:

Cooked and Shredded Chicken

Mayonnaise

Green onions

Yellow mustard

Red grapes

Walnuts

Celery

How to Serve Chicken Salad

Generally, served on a buttery croissant is my favorite way to eat chicken salad. However, I’d eat it with a spoon if given the opportunity! There are so many ways to enjoy this recipe, therefore, I can’t choose just one. In addition to tasting delicious on multigrain or white breads, it also tastes great on woven wheat crackers and saltines. But, if you struggle with gluten intolerance or need something with less sugar, then try some on a bed of lettuce. Furthermore, chicken salad stuffed peppers or a mound served with sliced veggie sticks are also winners in this category! With this in mind, I love serving this spread-on bread as well as spread together with crackers and veggies- at showers or tea parties in the spring and summer. Easy Chicken Salad Recipe

Ingredients

  • 4 Cooked and Shredded Chicken Breasts
  • ¾ cup of mayonnaise
  • 1 tsp of yellow mustard
  • ½ cup of green onions chopped
  • 2 cups of halved red grapes
  • 1 cup of chopped celery
  • 1 cup of halved walnuts

Instructions

  • Combined all ingredients into a large mixing bowl and mix thoroughly with a hand mixer (30-60 seconds). Serve chilled on bread, with crackers or sliced veggies

Tips for Making Chicken Salad

If you don’t want to use canned chicken for this recipe, but you want to save on time, use the Instant Pot. I completely obsessed with it, and I use it EVERY time I make chicken salad. Sometimes, I make large amounts of chicken ahead of time and freeze it for later.
