Kentucky Bourbon Bundt Cake

This cake is sweet, warm and incredibly moist. It's perfect for any occasion as a dessert or sweet breakfast treat. Tastes amazing by itself or with berries, syrup, ice cream, whipped cream and many other toppings!

Ingredients

  • 2 Cups of Belgian Waffle Mix
  • 2 Cups of Granulated White Sugar
  • 1/2 Cup of Powdered Sugar
  • 2 Cups of Softened Unsalted Butter
  • 4 Eggs
  • 2 Tablespoons of melted Coconut Oil
  • 1 1/2 cups of water
  • 4 Ounces of Kentucky Straight Bourbon
  • 2 Tablespoons of Vanilla Extract
  • Cooking Oil Spray

Instructions

  • Preheat oven to 350 degrees Farenheit. In a large mixing bowl (or standing Mixer), mix Belgian waffle mix and sugar and softened butter. Once mixed, add 4 beaten eggs, vanilla extract, coconut oil, bourbon and water. Mix into an even batter. If too thick, may add additional water, 1 tablespoon at a time, until it resembles a cake or pancake-like batter.
  • Spray bundt pan with cooking oil spray. Evenly pour batter into pan. Bake on middle rack for 40-45 minutes. Begin checking cake with a toothpick around 30 minutes. If toothpick comes out dry, cake is ready. If batter is on toothpick, continue checking until toothpick comes out of cake without batter.
  • Let cake completely cool. You may carefully flip out onto plate when bundt pan is cool to the touch. Top with powdered sugar prior to serving.
